I was thinking about the pop outs in the club scene of issue one, and one of the pop outs is of Cat and the other of the boy she meets at the bar. I'm wondering if the other pop outs are significant too.

The pop outs seem to highlight things that Cat is paying particular attention to - you can see that the things in the pop outs are all within her line of sight.
She uses one of the things she notices (the beer bottle) in her conversation with Rick, sort of demonstrating how she processes information for use later. So perhaps we'll see the other things come into play in later issues?
